Texas-style barbecue spot celebrates customer feedback with expanded menu
Huron Co BBQ, a Pigeon, Michigan restaurant known for its “Taste of Texas in the Thumb” branding, will mark its third month in business on Friday, August 8, with two major menu additions: a dessert offering and a trio of specialty smashburgers inspired by customer requests.
Owners Kelly, David, and Lucas announced on social media that the Sopapilla Mexican Cheesecake is joining the dessert menu. The rich, cinnamon-sugar-topped cheesecake is a nod to Tex-Mex cuisine and a first for the restaurant’s sweet offerings.
Three new smashburgers debut on August 8

To coincide with the anniversary, the restaurant is adding three limited-time specialty smashburgers, each served with a choice of side and priced the same as its standard “Uno, Dos, Tres, or Quatro” smashburger options.
- Patty Melt Smashburger – House-made chipotle sauce, grilled onions, smoked provolone, served on Texas toast.
- BBQ Bacon Smashburger – HCBBQ sauce, grilled onions, bacon, smoked cheddar.
- Jalapeño Smashburger – House-made jalapeño ranch, grilled onions, jalapeños, smoked pepper jack.
The Jalapeño Smashburger, owners note, “has a kick to it,” while the Patty Melt brings a diner-style twist and the BBQ Bacon draws on the restaurant’s signature house barbecue sauce.
Menu changes driven by customer input
According to the owners, the burger recipes were selected after reviewing guest suggestions over the restaurant’s first three months. “We have listened to all the requests from guests for specialty Smashburgers y’all want to have,” the announcement reads.
Customer-driven specials have been a part of Huron Co BBQ’s operating strategy since its May 2025 opening, with rotating sides, sauces, and smoked meats reflecting seasonal demand and community feedback.
Local dining scene benefits from competitive menu offerings
Pigeon and nearby Thumb-area towns have seen a gradual rise in chef-driven casual dining over the past two years, particularly in the barbecue and specialty sandwich segments. By introducing competitively priced specialty smashburgers without increasing the base burger rate, Huron Co BBQ is positioning itself to attract both repeat and first-time diners.
Regional dining trends show that burger promotions tied to anniversary milestones often result in a short-term spike in traffic, particularly when paired with a dessert launch.
Anniversary specials available for a limited time
While the sopapilla cheesecake is expected to remain a recurring dessert option, the three smashburgers will be available as part of the restaurant’s specials board starting August 8. Huron Co BBQ has not announced an end date for the burger promotion, leaving open the possibility that strong sales could move one or more into the permanent lineup.
