  2. Prepare the Cabbage/Kale – While potatoes are cooking, melt 2 tbsp butter in a skillet over medium heat. Add shredded cabbage or kale and sauté for about 5 minutes, until softened. Add green onions and cook for another 2 minutes.
  3. Mash the Potatoes – Mash the drained potatoes with the remaining butter. Gradually add warm milk or cream, mashing until smooth and creamy.
  4. Combine Everything – Fold the sautéed cabbage/kale and green onions into the mashed potatoes. Season with salt and black pepper to taste.
  5. Serve – Transfer to a serving bowl, make a small well in the center, and add a generous pat of butter. Serve warm as a side dish with corned beef, ham, or on its own.
